Do you know why brunch is better than breakfast? Because brunch means that mom got to sleep in a bit today! Below, we have included three recipes for a full and yummy brunch.

Crustless Tomato-Ricotta Pie

Crustless Tomato-Ricotta Pie

Ingredients

  • 1 container(s) (15-ounce) part-skim ricotta cheese
  • 4 large eggs
  • 1/4 cup(s) freshly grated Romano cheese
  • 1/2 teaspoon(s) salt
  • 1/8 teaspoon(s) coarsely ground black pepper
  • 1/4 cup(s) low-fat (1%) milk
  • 1 tablespoon(s) cornstarch
  • 1/2 cup(s) (loosely packed) fresh basil leaves, chopped
  • 1/2 cup(s) (loosely packed) fresh mint leaves, chopped
  • 1 pound(s) ripe tomatoes, thinly sliced

Directions

  1. Preheat oven to 375 degrees F. In large bowl, whisk ricotta, eggs, Romano, salt, and pepper until blended.
  2. In measuring cup, stir milk and cornstarch until smooth; whisk into cheese mixture. Stir in basil and mint.
  3. Pour mixture into nonstick 10-inch skillet with oven-safe handle. Arrange tomatoes on top, overlapping slices if necessary. Bake pie 35 to 40 minutes or until lightly browned and set around edge and center is puffed. Let stand 5 minutes before serving.

Blackberry Pie Oatmeal

Blackberry Pie Oatmeal

Ingredients

Oatmeal:
  • 1/2 cup(s) old-fashioned rolled oats
  • 1/2 cup(s) water
  • 1/2 cup(s) milk
  • 1 pinch(s) salt
  • 1/3 cup(s) blackberries
Toppings:
  • 1 tablespoon(s) chopped walnuts
  • Blackberries
  • 1  graham cracker, crushed

Directions

  1. In a small pot over medium heat, combine oats, water, milk, and salt. Stir occasionally, until oats are thick, about 5 minutes. Stir in blackberries until warmed through, then pour into a bowl and add toppings.

Wake-Up Smoothie

Wake-Up Smoothie

Ingredients

  • 1 1/4 cup(s)orange juice, preferably calcium-fortified
  • 1  banana
  • 1 1/4 cup(s) frozen berries, such as raspberries, blackberries, blueberries and/or strawberries
  • 1/2 cup(s) low-fat plain yogurt
  • 1 tablespoon(s) sugar, or Splenda

Directions

  1. Combine orange juice, banana, berries, tofu (or yogurt) and sugar (or Splenda), if using, in a blender; cover and blend until creamy. Serve immediately.

Chocolate Truffles with Sea Salt

Ingredients

  • 8 ounces, weight (up To 9 Oz.) Good Semisweet Chocolate
  • 8 ounces, weight (up To 9 Oz.) Good Bittersweet Chocolate
  • 1 can (14 Oz) Sweetened Condensed Milk
  • 1 Tablespoon Vanilla Extract
  • 8 ounces, weight Meltable Milk Chocolate
  • Sea Salt

Directions

  1. Heat dark chocolates and condensed milk in a double boiler over medium low heat until chocolate is melted. Stir—mixture will have a slight marshmallow texture. Stir in vanilla.
  2. Remove from heat, cover and refrigerate for two hours.
  3. Once chilled, roll in balls, then roll in melted milk chocolate coating. Sprinkle with sea salt or other fine, coarse sprinkles.

We Love Mom! • Breakfast in Bed

What better way to show your appreciation for your mom first thing in the morning than to surprise her with breakfast in bed? We have found the perfect recipe for a special breakfast – Chocolate Waffles! It doesn’t get much better than that!

Chocolate Waffles

Ingredients

  • 3 tablespoons unsalted butter
  • 3 tablespoons vegetable shortening
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons sugar
  • 3 large eggs
  • 1 cup milk
  • 1/2 cup chocolate syrup, plus more for topping
  • 1/2 teaspoon vanilla extract
  • Cooking spray
  • Confectioners’ sugar and/or berries for topping (optional)

Directions

  1. Melt the butter and shortening in a small saucepan, stirring to combine; remove from the heat and set aside. Whisk the flour, baking powder, salt and sugar in a large bowl.
  2. Whisk the eggs, milk, chocolate syrup and vanilla in a large liquid measuring cup or a separate bowl. Whisk the egg mixture into the flour mixture until combined. (The batter will be slightly lumpy.) Whisk in the butter mixture until combined.
  3. Preheat the oven to 250 degrees F. Preheat a waffle iron and spray with cooking spray. Ladle some of the batter into the waffle iron to within an inch of the edge (1/3 to 1/2 cup batter, depending on your waffle iron); cook until crisp. Transfer the waffle to a baking sheet and keep warm in the oven. Repeat with the remaining batter.
  4. Divide the waffles among plates. Dust with confectioners’sugar and top with berries and/or chocolate syrup.
